Ingredients of Mutton Yakhni Polao
- Prepare 1 kg of rice.
- It’s 1/2 kg of Mutton.
- Prepare 2 of medium size onion chopped.
- Make ready 2 of medium size tomatoes chopped.
- Prepare 1 tbsp of ginger garlic paste.
- Make ready 1 handful of coriander leaves.
- Make ready 4-5 of green chillies chopped.
- It’s 1 tbsp of coriander seeds.
- Make ready 1 tsp of fennel seeds.
- Make ready 1 tsp of cumin seeds.
- Prepare 1 tsp of shahi zeera seeds.
- It’s 10 of black pepper corn.
- You need 5 of lovang cloves.
- Make ready 2 of black cardamom.
- Make ready 5 of green cardamom.
- Prepare 2 of star anaise.
- Prepare 3 of bay leaves.
- Take 2 of cinnamon stick.
- Prepare 1 of mace.
- Prepare 1/2 cup of fresh yoghurt.
- Make ready 2 cups of water (normal use cup).
- It’s 1/2 cup of oil.

Mutton Yakhni Polao step by step
- In a karahi take oil. Add shahi zeera, black cardamom, cinnamon stick, bay leaves, lovang cloves, green Cardamom, star anaise, mace, black pepper corn and fry for few seconds..
- Now add onion and cook till it's color change to golden brown. Flame should be medium high in this stage..
- Now add Mutton and fru for 3 minutes. Then add water and cook for 2 minutes..
- Add ginger garlic paste and fry for 2-3 minutes. Add salt and yoghurt and fry Mutton till oil separated..
- Now add chopped green chillies and chopped fresh coriander leaves, tomatoes and mix well..
- Now crushed cumin seeds, coriander seeds, fennel seeds and add it to Mutton. And cook on medium to high flame for 3 minutes..
- Pour whole mixture to pressure cooker. Add 2 cup (normal use cup or tea cup) of water and cook for 20 minutes..
- Now add rice and mix it. Cover and cook for 10 minutes in pressure cooker. Open the lid and cook on low flame for 2-3 minutes without covering..
- Now delicious Mutton polao is ready to serve 😋..
