Langcha - A famous Bengali dessert, irresistible :) instructions

  1. Mash the crumbled cottage cheese using your palm on the kitchen slab or flat platform till it is very smooth and creamy and has absolutely no lumps. Add the milk powder and all purpose flour to this and mix well. Add green cardamom powder too. Make a dough and rest this for 10 mins..
  2. Then divide the dough into 15-20 equal size round balls and shape them like a langcha (cylindrical) using your palms. The shape should be even and smooth coz' this will help to fry them evenly..
  3. Meanwhile take a heavy bottom pan, add water and sugar to make the sugar syrup. Keep the heat to medium and stir well. As the sugar dissolves completely and it boils reduce the heat. Break few green cardamoms and add to the syrup. The consistency of syrup should not be thick. Once done, sitch off the stove and keep aside..
  4. Heat oil in another heavy bottom pan and fry the langchas one by one evenly till you get a dark brown color (not to over fry). After frying, transfer them directly into the hot syrup and let it soak for 20–25 mins..
  5. You can take them out from syrup or keep them in syrup to serve :)… Garnish it with some crushed pistachio. Enjoy!.
