Ingredients of Rib Eye with Sweet Potato Mash

  1. You need 2 of Large Rib Eye cuts of beef.
  2. It’s of Sweet potato.
  3. It’s of Brocolli.
  4. Prepare of Salt and Pepper.
  5. You need 2 tablespoon of olive oil.
  6. You need 2 cloves of garlic finely chopped.
  7. It’s 40 g of unsalted butter.
  8. Take of Chopped parsley.

Cut the mushrooms in half lengthwise; cut any large mushrooms into quarters.For the potato straws: Peel the potatoes and use a mandolin to cut into thin threads.Pat the potatoes dry and toss with the flour.I never serve sweet potatoes with beef.

Rib Eye with Sweet Potato Mash instructions

  1. Peel and cut sweet potatoes into cubes, simmer for 20mins in a pan with 2 teaspoons of salt.
  2. Drain the potatoes and add butter, garlic, salt and Parmesan.
  3. Mash the potatoes, add a splash of milk if required.
  4. Add oil and seasoning to griddle pan and put on a high heat, cook the steaks for 3 mins either side and then let them rest for 8 mins.
  5. Slice the steaks and serve with the sweet potato mash (chopped parsley ontop) and sautéed brocilli.
