- It’s 4 of average size zuchinni.
- You need 8 of vine tomatoes.
- Take 1 lb of ground chicken.
- Take 1/4 of extra virgin olive oil.

- It’s 2 of garlic cloves.
- You need 1/2 of medium onion.
- Take 2 Tbsp of fresh basil (heaping).
- Make ready 2 tsp of Italian seasoning.
- Prepare 1 tsp of garlic salt.
- Take 1 tsp of onion salt.
- It’s of Shredded Mozzerla.
Stuffed Zucchini w/ homemade Sauce instructions
- Steam tomatoes until skins begin to crack. Approx 10 minutes. Once they cracked, dump them in a bowl of cold water and peel. Slice them in 1/2 and seed them. Place in food processor/blender and blend until desired consistency..
- Brown ground chicken, garlic and onions on the stove top..
- In the meantime, slice the Zucchini in 1/2 lengthwise and hollow out the middle to make a "boat"..
- Once chicken is cooked through, add all seasonings, salt and pepper to taste and the tomato mixture..
- Simmer and reduce until desired consistency (approx 2 hrs). You could also place it in your crockpot!!.
- When sauce is complete, fill your Zucchini boats and place them in a baking dish..
- Bake at 375° until al dente approx 20 mins. Then add a sprinkle of mozzarella to the top and broil..
