Ingredients of Peanut Rice

  1. Take 3 cups of cooked rice.
  2. You need 1 cup of peanuts.
  3. It’s 5 of dry red chillies.
  4. It’s 2 tsp of white seaseme seeds.
  5. Make ready 2 tsp of urad dal.
  6. Make ready 3 tsp of dessicated coconut or dry grated coconut.
  7. It’s 1/2 tsp of mustard seeds.
  8. Make ready 1/2 tsp of hing.
  9. Prepare 2 tsp of tamarind pulp.
  10. It’s leaves of Few curry.
  11. It’s of Salt to taste.
  12. Prepare of Oil as required.
  13. It’s 1 tsp of ghee.

Peanut Rice step by step

  1. For peanut masala : Heat some oil in a pan, add 1/2 cup peanuts, urad dal, seaseme seeds, dessicated coconut, dry red chillies and fry it for 3-4 mins on a low flame, until you get a nice aroma..
  2. Allow the mixture to cool down and make a coarse paste of it without adding any water..
  3. Heat some more oil in a pan, add the mustard seeds, once it splutters, add few curry leaves, hing and the remaining peanuts, fry it until the peanuts starts to crackle..
  4. Next add the cooked rice, tamarind pulp & salt to taste, gently mix it well..
  5. Next add the peanut masala, gently coat it well with the rice, cook it for 2-3 mins, add some ghee, switch off the flame and cover and allow it rest for few minutes before serving..
