Ingredients of Dal Kachori with Aloo Kumdha Sabzi
- You need For of Dal Kachori–.
- Prepare 1/4 cup of urad dal soaked for 2 hours.
- Make ready 2 cups of maida.
- Prepare 2 of green chillies.
- You need 1/4 " of ginger.
- You need 1/4 tsp of red pepper powder.
- Make ready 2 tsp of clarified butter or ghee.
- You need to taste of salt.
- Make ready as required of Oil for frying.
- Take For of Aloo Kumdha Sabzi–.
- It’s 200 grams of potatoes peeled & cut into 1".
- Prepare 200 grams of kumdha (yellow pumpkin) peeled & cut into 1".
- It’s 2 of medium onions cut into thin slices.
- You need 4 cloves of garlic cut into small pieces.
- Make ready 1 of medium tomato cut into small pieces.
- You need 2 of green chillies slit into half.
- You need 1/2 " of ginger cut finely.
- Make ready 1 tsp of red pepper powder.
- It’s 1/2 tsp of haldi powder.
- Prepare 4 tsp of dhaniya powder.
- You need 1 of bay leaf.
- You need 2 of whole red peppers.
- Prepare 2 tsp of panchphoran (methi- jeera- rai- saunf-magrella).
- Take 1/4 tsp of hing powder.
- Take 1/2 tsp of garam masala.
- It’s to taste of salt.
- You need 2 & 1/2 cups of water.
- Take as required of green coriander chopped for garnishing.

Dal Kachori with Aloo Kumdha Sabzi instructions
- For–Dal Kachori.
- Grind into a fine paste with chillies and ginger..
- Put maida in a big bowl, add ghee, red pepper, salt and mix well..
- Add the dal paste and knead into a semi soft dough..
- Sprinkle little water if required..
- Keep it aside for 15 minutes..
- Mix again lightly and make small balls..
- Roll the balls into thin desired Kachori size with the help of little oil..
- Deep fry in oil on high flame..
- Serve hot.
- For Aloo Kumdha Sabzi–.
- Heat a big kadhai & add both the oils together..
- Add panchforan, hing, bay leaf, whole red peppers..
- Add green chillies, ginger, garlic, onions, tomatoes and saute for 2 minutes.
- Add potatoes and kumdha, saute for 2 minutes.
- Add haldi, dhaniya powder, red pepper powder, salt and saute for another 5 minutes on high flame.
- Add water, mix well, bring to boil & cover with a lid and cook on slow flame till the vegetables are done.
- When cooked check the consistency of the gravy.
- Switch off the flame. Sprinkle garam masala and cover with a lid for 5 minutes.
- Garnish with chopped coriander.
- Serve hot with dal kachori.
