Ingredients of Palak Aloo ki bhujiya

  1. Prepare 1 kg of palak/spinach.
  2. Make ready 5 of potatoes.
  3. Prepare 4 of tomatoes.
  4. You need 2 of Onions (1 Small & 1 medium).
  5. Take of Salt.
  6. You need 1 tbsp of Red chilli powder.
  7. Make ready 1/4 tsp of Turmeric.
  8. It’s Pinch of kalonji.
  9. Take Pinch of ajwain.
  10. Make ready 1 of & 1/2 tbsp sukhi/dry methi.
  11. Prepare 1/2 of lemon.
  12. Prepare 1 cup of oil.
  13. It’s 2 tbsp of Desi ghee.
  14. It’s 6-8 of green chillies cut into 2 pieces.

  16. Take of You can change quantity of spices according to your taste buds.

This Aloo Palak is one of my personal favorites.My mom used to make it a lot during winters when we would get really good fresh spinach in the market.Aloo palak can be made in a number of ways.I also make it in several ways, sometimes I add water to the spinach and make it like a curry and then.

Palak Aloo ki bhujiya step by step

  1. Wash all vegetables. Cut them and put in separate bowls..
  2. Cut spinach/palak and wash them 3 to 4 times. Now blanch the spinach and strain out it's water..
  3. Pour oil in a pan, add onions and saute it..
  4. Now add tomatoes, salt, red chilli powder, turmeric, kalonji and ajwain. Bhonofy it very well..
  5. Then add spinach, potatoes and little water. Cook it till vegetables become tender..
  6. When vegetables become tender, add dry methi, lemon and green chillies. Bhonofy it very well till oil comes out…
  7. At last add Desi ghee and bhonofy it for a minute or till oil comes out..
  8. Serve it hot with Chapatis/ Parathas.
