Ingredients of Chicken and Corn Chowder

  1. Prepare of butter.
  2. It’s of medium carrots, diced.
  3. Make ready of frozen pepper stir fry.
  4. It’s of garlic, minced.
  5. It’s of bacon, chopped.
  6. It’s of flour.
  7. Take of chicken broth.
  8. Prepare of potatoes, chopped.
  9. Prepare of chicken breast, cooked and chopped.
  10. It’s of frozen whole kernel corn.
  11. It’s of heavy cream.
  12. It’s of salt and pepper to taste.
  13. It’s of Tony Chacheres, to taste.

Chicken and Corn Chowder instructions

  1. Melt butter in large heavy bottom pan. (I use a cast iron dutch oven).
  2. Saute carrots until partially soft..
  3. Add pepper stir fry. Saute until onion is translucent and peppers are soft..
  4. Add bacon and cook until fat is rendered..
  5. Add garlic. Saute 1 minute..
  6. Add flour and stir to a thick paste. Add oil if to thick. Add more flour if too thin. Cook 2 minutes, stirring constantly..
  7. Stir in chicken broth..
  8. Add chicken, corn, salt and pepper..
  9. Simmer about 30 minutes, stirring occasionally..
  10. Stir in heavy cream. Do not allow to return to simmer..
  11. Top bowls with Tony's to taste..
